Ice Cream Cake With Chocolate and Oreo

Ingredients :

For Crust :

• 15 Oreo cookies (one sleeve)
• 2 Tbsp coconut oil, melted

For the Filling :

• 6 cups dairy-free vanilla coconut milk ice cream, such as PC or Coconut Bliss
• 15 Oreo cookies (one sleeve)
• 1/2 tsp flaky salt

For Topping :

• 2 cups dairy-free vanilla coconut milk ice cream, such as PC or Coconut Bliss
• 8 Oreo cookies (half of one sleeve)

For Chocolate Shell :

• 1/2 cup dairy-free mini chocolate chips
• 2 Tbsp coconut oil

Steps :

1. Before start this,prepare platfrom pan 7-8 inch then cover with parchment paper.
2. Mix half the oreo to blender until crushed,add the coconut oil.Mix again until combined.Spring on the platform pan on the bottom for base.
3. For make the filling : Blend the rest oreo with large blender,then add vanilla coconut milk ice cream.Blend again until get smooth texture.Add salt to taste,mix again.Then bring to the freezer for 6 hours.
4. For the Topping : Take 2 scoops of ice cream make it balls shape,then transfer to the freezer together with platform pan.
5. To make Chocolate Shell : Take out the filling batter(step 3) from freezer,bring to frying pan set to low heat.Add the coconut oil and chocolate chips,stir for 2 minutes until it melted.
6. Remove the platform pan from freezer,let it cool for 5 minutes.Take the cake from platform pan with knife carefully,then bring to serving platter.
7. Spread the chocolate shell to the cake,do it fast so that not frozen.Let it fall on the edges cake,sprinkle with crust oreo on the top.
8. Add ice cream balls from freezer(step 4),bring to center cake on the top,spread with reserve chocolate shell for topping.
9. Bring back to the freezer for 1 hour quickly,then take out from freezer.And enjoy it.
