For the Crepes
1 cup all-purpose flour
1/4 teaspoon salt
1 1/4 cups milk,1% or 2%
2 tablespoons butter melted
For the Filling
1 medium yellow squash
2 cups quartered brown mushrooms (about 7 mushrooms)
1 1/2 cups waxy potato
3 tablespoons olive oil divided
1 small red bell pepper
1/2 medium yellow onion, diced (about 1/2 cup)
Salt and pepper
1 cup Hollandaise sauce
In a bowl,mix flour and salt.In a separate bowl,mix together eggs,milk and melted butter.Whisk eggs and flour mixture into smooth.Cover this and refrigerate for one hour.Strain mixture into clean bowl.
Next heat a pan into over medium heat.Bring pan with some oil.Pour approximately with 1/4 cup batter into center of pan,swirling pan to coat.Cook for one minute or until a light golden colour.Flip and cook for 30 seconds.Bring to a plate.Repeat again with remaining batter.
After that place a 12" or larger skillet for which you have it,over medium,high heat.Add one tablespoon olive oil to coat the pan,add the quartered mushrooms with a few generous pinches of salt to seasoning.Saute until they cooked golden brown on all sides (estimate 5 to 7 minutes).Use a slotted spoon to move the mushrooms to a plate.Keep it
Then pour the remaining two tablespoons olive oil to the pan.Add the potatoes and season with salt and pepper stir it.Turn the heat down to medium,cover and allow to cook for 5 minutes.And then remove the cover and add the squash,pepper and onion.Turn the heat back up to medium high and saute until the potatoes are soft and the vegetables are browned (estimate 4 to 7 minutes).Wrap the mushrooms back into the pan of vegetables.Add the Hollandaise sauce and mix.
Stuff the crepes with vegetable mixture (fold up your style) and eaten when its hot or at room temperature.
NOTED : Make ahead : Stack crepes between waxed pepper,wrap and refrigerate for up to 3 days or freeze up to one month.
