Best Eggs Benedict With Hollandaise Sauce

Ingredients :

• 4 egg yolks
• 1 tbsp fresh squeezed lemon juice
• 1/2 cup unslated butter
• Pinch cayenne
• Pinch salt

For Egg Benedict :

• 8 slices canadian bacon
• 4 English muffins
• 2 tsp white vinegar
• 8 eggs
• Hollandaise sauce
• Salt and pepper
• Fresh parsley, chopped

Steps :

1. Prepare a stainles bowl,add lemon juice and egg yolks mix until thickened and expands.
2. Prepare a saucepan,bring with water slowly then add the bowl(step 1),mix again rapidly(Caution : the egg don`t get too hot because it will be scramble).Add the melted butter,mix until the batter is thickened.
3. Remove from the heat then add salt and cayenne,mix until combined.Set aside on the warm spot to keep the batter is warm.
4. Cook the canadian bacon with frying pan on the medium heat,meanwhile toast the English muffins then cut sides up.
5. Fill frying pan with water about 10 inch or half and add white vinegar.Beat the eggs,add to frying pan.This vinegar will make egg white cook more faster,so don`t until it broke(beat the eggs one by one).Then reduce the heat,cook for 3 1/2minutes.
6. Take out the eggs from frying pan with spatula or slotted spoon.
7. To serve,bring the canadian bacon on the top of English muffins then add the poached egg.Seasoning with salt and pepper,bring the Hollandaise sauce on the top.And the last garnish with chopped parsley.Enjoy it.
